CAT'S HASH

My beautiful late wife, Cathy made this as our comfort meal.
It could be whipped up in no time and was perfect if you
needed to go to the grocery store but just flat didn't want to.
You can make it with bare bones ingredients if necessary.

HERE'S HOW TO DO IT:

INGREDIENTS:

1 1/2 lbs. lean ground beef
2 medium to large onions, (diced)
1 large green pepper, cut in 1/4"
strips, then halved diagonally
1 large can or 2 small cans of Italian style
stewed tomatoes
1 cup hot water
2 teaspoons Cajun - style seasoning
sauce. (for meat)
or 1 - 2 tsp. of chili powder (optional)
1 cup uncooked instant rice.
salt  (to taste)
1/2 tsp. cracked black pepper

Heat oven to 350 F. In a large Dutch oven (5qt.cast iron with lid, recommended),
cook and stir ground meat until lightly browned. Drain in colander. (small holes)
When drained, use hot water (from sprayer) to rinse meat for 1 min. or so.
Return to Dutch oven. Add onions, green peppers until onions are tender,
stir frequently. Add in tomatoes, seasoning, salt, pepper and rice until
heated thoroughly. Cover, place in oven and bake 30 minutes.
If mixture is still too liquid, remove lid and heat on the burner,
medium heat until desired consistency.

Variations can be made:
Omit rice & water to make a unique topping for pasta.

Omit rice, substitute canned sloppy joe sauce for
stewed tomatoes.
