MOM'S STACKED
ENCHILADAS

My favorite meal as a kid, I still crave it, but now I make it !
My mom (LaQuita) would top that stack with a fried egg.
Heave on some Tabasco ... and you'll be turning Japanese !

HERE'S HOW TO DO IT:

 

INGREDIENTS:

1 1/2 lbs. ground meat
1 lb. grated cheese (you decide)
2 cans enchilada sauce
1 small can of green chilies
1 nice onion
1 pkg. taco seasoning mix
Flour tortillas (2-4 per serving)
1 Egg per serving

Follow instructions for browning meat and adding seasoning. Add 3/4 chopped onion to meat ... drain as usual.
Heat enchilada sauce in large pan. Dip tortillas in sauce as you build the enchilada stack.

Start with tortilla on bottom, sprinkle meat, onion, chilies, cheese and a little sauce on the layer
then repeat at your discretion.
(2 -3 stacks usually for women and 3 -4 for men)

Build these stacks on oven capable serving plate and store each plate

in a "just warm enough" oven long enough to fry one egg to top each tortilla.
The last layer of the stack should NOT have a tortilla, but rather a smaller portion of each ingredient in the stack.
Add the fried egg to top of stack and garnish plate with shredded lettuce and tomato chunks.
Add hot sauce to your taste.

Makes two servings with ~4 stacks or 3 with ~3 stacks.
